Lasagna recipe for Eggplant

ingredients:

  • 2 eggplants sliced longitudionais (about 4 slices of eggplant)
  • 5 tablespoons oil
  • salt and pepper
  • 1 cup sliced ​​mushrooms
  • 2 chopped garlic cloves
  • 1 teaspoon thyme
  • 1 ricotta
  • 3 eggs
  • 1 cup grated Parmesan
  • 2 tablespoons of oregano
  • 2 cups tomato sauce

Method of preparation:

First place the eggplant slices, greased with olive oil and seasoned with salt and pepper in a dish and bring to bake until tender and golden (about 25 minutes). Meanwhile, in a saucepan place the remaining oil and the sliced ​​mushrooms. Saute for about 7 minutes, add the garlic and thyme and cook for 2 more minutes. Reserve.

In a large bowl, add the ricotta, eggs, 1/2 cup Parmesan cheese, oregano, mushrooms, salt 2 teaspoons pepper and 1/4 teaspoon of tea. Mix well.

Assembling the lasagna:

Grease a baking dish with olive oil and spread tomato sauce. Cover with half the eggplant slices and then the ricotta mixture. Place the slices leftovers, tomato sauce and finally the rest of the parmesan. Bake for about 30 minutes or until golden brown.
